Authentic Pasta Carbonara

Authentic Pasta Carbonara

Ingredients

  • 1 lb spaghetti or linguine
  • 8 oz bacon or pancetta, diced
  • 4 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, fry the bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Add garlic in the last minute.
  3. In a bowl, whisk together eggs and Parmesan cheese until well combined.
  4. Drain the pasta and immediately add it to the skillet with bacon. Remove from heat.
  5. Quickly pour the egg mixture over the hot pasta, tossing continuously to create a creamy sauce. The heat from the pasta will cook the eggs.
  6. Add reserved pasta water a little at a time to reach desired consistency.
  7. Season generously with black pepper, garnish with parsley and extra Parmesan. Serve immediately!
