Authentic Pasta Carbonara
This is the real deal - authentic Italian carbonara with a silky, creamy sauce made from eggs and cheese. No cream needed! Simple ingredients come together to create restaurant-quality pasta at home.
Ingredients
- 1 lb spaghetti or linguine
- 8 oz bacon or pancetta, diced
- 4 large eggs
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, fry the bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Add garlic in the last minute.
- In a bowl, whisk together eggs and Parmesan cheese until well combined.
- Drain the pasta and immediately add it to the skillet with bacon. Remove from heat.
- Quickly pour the egg mixture over the hot pasta, tossing continuously to create a creamy sauce. The heat from the pasta will cook the eggs.
- Add reserved pasta water a little at a time to reach desired consistency.
- Season generously with black pepper, garnish with parsley and extra Parmesan. Serve immediately!
